One of my yoga teachers shared this amazing butternut squash soup recipe.
I made a few changes - I had a small butternut squash, and a big hunk of Cayman pumpkin, so I used those. I didn't have an apple so threw some applesauce in. I also used thyme instead of sage and left off the poppy seeds altogether.
This would be a good way to use those pumpkins after Monday night! Mine are already growing mold so I won't be using them - boo!
